Description

You have the chance to own a garden with fruit trees? Or even some flowers?

Instead of the same old fruit purees and pies, make your own jams that will delight your customers at breakfast!

At Le Clos des Capitelles, the owners produce their jams with : pomegranates, figs, loquats and plums.

Here are some recipes:

Pomegranate jam

Ingredients
  • 1 kg of pomegranates
  • 500g of jam sugar
  • Juice of 2 oranges
  • 2 tablespoons orange blossom water
  • 200g of almonds or pine nuts (optional)
Concoction
  • Cut the pomegranate in half and remove the seeds gently. Put the seeds in a large pot.
  • Add sugar, orange blossom water and orange juice. Pour a little water so the fruits are covered with liquid. Heat them and boil for 5 minutes.
  • Reduce heat and simmer for about twenty minutes until the fruit is well melted and covered with a sugar syrup. Mix with almonds or pine nuts.
  • Pour the still boiling jam in glass jars previously boiled for sterilization. Immediately close the jars tightly.

Loquats jam

Ingredients
  • 1 kg of loquats
  • 800g of powdered sugar (without pectin adjonction)
  • 35 cl of water
Concoction
  • Empty the loquats practicing a slot on the side and then pressing the envelope to pop out the pulp and the seeds. Put the resulting assembly in a pot with the sugar and water.
  • Bring to boil, stirring frequently to prevent caramelization and to allow seeds to get rid of the pulp adhering.
  • After 10 minutes, turn off the heat and pour into a colander over a bowl. Using a large wooden spoon, stir the mixture by pressing until it remains only the seeds (which can now be thrown).
  • Empty the contents of the bowl into the pot and boil again for a good 5 minutes, still stirring.
  • Pour the still boiling jam in glass jars previously boiled for sterilization. Immediately close the jars tightly.
