Who does not fall for the delicious smell of warm bread?

Make your own bread is not that complicaed, with a (good) knack, Faire du pain, ce n’est pas si compliqué, en un (bon) tour de main, voila !

Christine, from Tenorio Lodge in Costa Rica, tells us her secret recipe through which world travelers can enjoy bread “à la française (understand, the French way) on the other side of the ocean.

What ingredients for your homemade bread?

For 12 large breads :

  • 2 kg of wheat flour
  • 25 gr of salt
  • 25 gr of dry yeast
  • 600 gr of fresh yeast
  • 700 gr of water
  • A little bit of oil (optional)

The great tips of Christine:

To make your fresh yeast for the first time:

  • Take one kilo of flour, 350 grams of water, 14 grams of salt, 20 grams of chemical dry yeast.
  • Mix everything, knead well (with one hand first, then with both), wait half an hour, knead again, wait an hour or two, put it in a closed container (which has to be twice bigger than the dough because it will then inflate), and keep it in the fridge at least 2 or 3 days before you can start using it.

Then, in the future, each time you make bread dough, keep 600 grams of the dough in a closed container, 24 hours later, it turns back to fresh yeast, ready to use to make your bread, or even pizza !

To make your bread dough:

  • Take all the ingredients mentioned above and knead: first the flour, then the salt and the dry yeast, then the fresh yeast, and at the end the water.
  • Knead the dough in 2 steps : one first time, then wait half an our, and knead again (you can observ Christine’s expert hand movement on the video above for the kneading).
  • Take off 600 grams of the dough to keep it for your future fresh yeast.
  • Let the dough rest in an environment where the ambient temperature is over 24°C .
  • Butter our molds, preheat your oven (200°C), and put your bread in the oven.
  • Let it bake during 30 to 50 minutes (depending on if you like it soft or crusty)
  • Get your bread out of the oven, it is ready to be savored. If you want to eat it later, keep each breach in tin foil and keep it in the freezer. For the defrost : either naturally by putting it the day before in the fridge, either express defroast in the microwaves.
